Pasta could be on my dinner plate every day of the week. Who doesn't love a plate of pasta? Pasta dinners tend to have easy prep and cook up quickly. This creamy Italian sausage pasta recipe is no exception. The easy sauce that coats the broken-up lasagna noodles is rich and satisfying. This is one pasta recipe you've got to try.
To make this Italian-inspired dinner you need just a few simple ingredients. Here is your shopping list: lasagna noodles, olive oil, Italian sausage, garlic, tomato paste, white wine (see Recipe Notes), chicken broth, dried Italian seasoning, crushed red pepper flakes (optional, but adds a kick for spice lovers), heavy cream and Parmesan cheese.
The pasta boils while the sauce cooks. Add the cooked pasta to the simmering sauce, stir and dinner is ready to be served. The rich, comfort food dish comes together in less than 30 minutes.
Serve the creamy sausage pasta for dinner with your favorite side dishes. We chose not to have a side dish and dug into bowls of the creamy noodles while watching our favorite baseball team win. If we sat down at the dinner table, I would have added a crisp garden salad or Caesar salad and some garlic bread.

Ingredients
- 9 ounces lasagna noodles, broken into pieces
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed if links
- 2 - 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1/2 cup dry white wine or chicken broth
- 1 tablespoon dried Italian seasoning or Tuscan seasoning
- crushed red pepper flakes, to taste (optional)
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
Recipe Notes
- You could use lasagna sheets instead of lasagna noodles. Simply cut or tear them into strips. If using lasagna noodles, break them into irregular pieces in a bowl.
- If the sauce gets ready before the pasta is done cooking, simply turn the sauce off. Turn the heat back on when you add the cooked noodles to heat through.
- If you don't have or like to cook with wine, simply use more chicken broth.
- I buy tomato paste in a tube, so you use just what you need, put the cap back on and store in the fridge for the next recipe.
- I used Tuscan seasoning that had salt in it, so I didn't add any additional salt to the recipe. I did add some black pepper to the sauce.
- Choose your Italian sausage based on your taste preferences: mild , regular or spicy. If you don't like Italian sausage, use ground pork, ground beef or a combination.
- Store any leftovers in an airtight container in the fridge for up to four days.
Here's how to make it:
- Bring a pot of salted water to a boil. Heat the olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up as you stir, until cooked through, about 5 minutes.
- Add the garlic and cook 30 seconds.
- Add the tomato paste and cook, stirring, for about 2 minutes.
- Pour in 1/2 cup of white wine or chicken broth. Cook, stirring, for about 3 minutes or until it starts to evaporate.
- Add the 1 cup of chicken broth, Italian seasoning and crushed red pepper flakes, if using. Bring to a simmer and reduce by half, about 2 to 3 minutes.
- Pour in the cream.
- Let the mixture simmer gently, stirring often, about 4 minutes.
- While the sauce simmers, add the lasagna noodles to the boiling water to cook.
- Stir in the Parmesan cheese until melted.
- Add the cooked and drained noodles.
- Stir to combine.
- Serve with additional Parmesan cheese and fresh basil, if desired. Enjoy!
