I found these gorgeous marble potatoes at my local farmers market. What are marble potatoes? Marble potatoes are small, round and colorful (like marbles) potatoes with yellow, red and purple skins that do not have to be peeled before eating. This variety of new potatoes has a sweet and buttery flavor, and the fun colors add interest to the plate. Marble potatoes are loaded with vitamins and nutrients, so you can feel good about serving them to your family.

This marble potatoes side dish recipe fits in well with the Mediterranean Diet. Here are the healthful ingredients you need for this colorful vegetable recipe: marble potatoes (or new potatoes), olive oil, balsamic vinegar, lemon juice, Greek or Mediterranean seasoning, garlic powder, oregano and feta cheese. The potatoes are tossed into the Greek lemon mixture, baked and then topped with feta cheese.   • You can use Greek, Mediterranean or even Italian seasoning in a pinch.
  • Small red potatoes, white potatoes or fingerlings would be good substitutes if you can't find marble or new potatoes.
  • I prefer to use fresh lemon juice, but you can use bottled lemon juice if needed.
  • Store leftovers in an airtight container in the refrigerator. Reheat in the oven for tastiest results.

Here's how to make it:

  1. In a large mixing bowl, combine olive oil, balsamic vinegar, lemon juice, Greek or Mediterranean seasoning, garlic powder and oregano. Whisk to combine.
  2. Add potatoes to the mixing bowl and stir to coat the potatoes in the mixture.
  3. Pour the potatoes into a 13x9-inch baking pan or casserole dish. Season with salt and pepper, if desired.
  4. Bake at 375 degrees F for about 40 minutes, stirring every 10 minutes, until potatoes are tender and golden.
  5. Remove from oven and top the potatoes with the feta cheese crumbles. Return to the oven and bake for 5 more minutes. Stir and serve.
