Healthy 3-Ingredient Chocolate Dipped Raspberry Candy Recipe

It's so wonderful to have some simple sweet treat recipes that take little time, effort and ingredients but hit the spot so well. These three-ingredient chocolate raspberry jam bites are a little bit of heaven in one yummy bite. The chocolate candies are delicious and, believe it or not, they're good for you! With three wholesome, healthy ingredients, you can't go wrong making these whenever that sweet tooth acts up!

To make this low-sodium chocolate raspberry candy recipe, you will need to gather the following short list of ingredients: fresh raspberries (read about the health benefits of raspberries), chia seeds (read about the health benefits of chia seeds) and dark chocolate (read about the health benefits of dark chocolate).

The chia seeds and raspberries and mushed together, formed into a ball and frozen before being dipped into melted chocolate. Amazing! Serve these gluten-free raspberry chocolate chia seed bites for dessert or as a sweet snack anytime.

Ingredients

  • 16 ounces fresh raspberries (about 4 cups) or 12 ounces frozen raspberries

  • 2 tablespoons chia seeds
  • 12 ounces dark chocolate (60% to 72%), chopped

  • I used 72% dark chocolate and frozen berries.
  • Store the candy in an airtight container the refrigerator.

Here's how to make it: 

  1. Put the raspberries into a mixing bowl along with the chia seeds.
  2. Use a fork to mash them together. If you are using frozen raspberries, add up to 1/4 cup of water, 1 tablespoon at a time, to help blend the mixture.
  3. Place spoonfuls of the mixture onto a parchment paper-lined baking sheet. Freeze for at least 1 hour and up to 8 hours.
  4. Before removing raspberry bites from the freezer, put the chocolate into a microwave-safe bowl and melt in 30-second intervals, stirring the chocolate after each segment. (My chocolate took 90 seconds.)
  5. Remove raspberry bites and use a fork to dip them into the chocolate mixture. Before placing them back on the parchment, drizzle a small bit of chocolate onto the paper and place them on top. Continue to dip and place back on the parchment until they are all covered.
  6. Serve immediately or place into an airtight container and freeze for up to one month.
