Leeks are a vegetable that I love but don't cook often. After making my creamy turmeric chicken soup recipe, I had two leeks leftover and decided to roast them. Now I'm wondering why I don't cook with leeks more often! These baked leeks are tender, flavorful and a wonderful side dish with dinner. Not to mention the health benefits of leeks.
What I loved about this easy leek recipe is that it's simple. Just leeks, olive oil, Parmesan cheese, salt and black pepper. While I love au gratin vegetables, I wanted something lighter to let the leek flavor shine. This vegetable recipe hit the mark! The leeks are baked in olive oil for about 20 minutes before a light sprinkling of Parmesan cheese is added. Ten more minutes in the oven, and they're ready to be served.
These roasted leeks go well with chicken, pork, beef or seafood. I served mine with seasoned chicken breasts, blistered green beans, cauliflower and a fresh Caesar salad with homemade croutons. Leeks will be on the menu more often now.

- 2 leeks
- 1 tablespoon olive oil (or as needed)
- 1/4 cup grated Parmesan cheese

Recipe Notes
- Leeks are dirty vegetables. Be sure to wash them thoroughly to remove all the sand and dirt that can get trapped between the layers.
- Add more Parmesan cheese if you want this side dish cheesier.
- You could use parchment paper for easier cleanup.
- Use whatever size pan fits the leeks. I used my 13x9-inch Le Creuset pan.
- Chop up any leftover leeks and add them to a salad.
Here's how to make it:
- Start by cleaning the leeks. Cut them in half lengthwise and run them under water to remove all the dirt and sand. Gently lift the layers to make sure they are thoroughly cleaned.
- Drizzle the olive oil in a baking pan. Put the leeks in the pan and turn to thoroughly coat with the olive oil. Season with salt and pepper. Put them cut side down in the pan.
- Roast in a preheated 425-degree F oven for 20 minutes.
- Remove and gently turn the leeks over. Sprinkle with the Parmesan cheese. Bake 10 more minutes.
