Ginger Beef & Broccoli Recipe With Cashews (20 Minutes)

The taste of this gingered beef broccoli recipe is a bit more intricate and will make your taste buds dance!

To make this 20-minute Asian-inspired recipe you will need to gather the following list of flavorful ingredients: sesame oil, sirloin or flank steak, cornstarch, broccoli, shallots, butter, garlic, pickled ginger (read about the health benefits of ginger), cashews, low-sodium soy sauce or tamari and sweet Thai chili sauce. The dish cooks up in one skillet in about 10 minutes after a short prep time.

  • If you can't eat nuts, leave the cashews out.
  • You can use fresh ginger root or buy a jar of pickled ginger (also called sushi ginger). I love pickled ginger, and it adds a different layer of flavor to this dish. But fresh ginger would be delicious, too.
  • Pickled ginger is available in most larger grocery stores and in Asian markets.
  • To make slicing the steak easier, place it in the freezer for 30 minutes beforehand.
  • If you want this recipe to be gluten-free, use gluten-free sauces and/or tamari.
  • Store any leftovers in an airtight container in the fridge for up to four days.

Here's how to make it: 

  1. Combine the soy sauce, sweet Thai chili sauce and pickled ginger juice or red wine vinegar in a small bowl. Set aside.
  2. Sprinkle the meat with the cornstarch. Toss to coat.
  3. Heat the sesame oil in a large skillet or wok. Add the meat, season with a little black pepper, and cook, stirring, over medium-high heat until seared, about 5 minutes.
  4. Add the broccoli, shallots, butter, garlic, ginger and cashews. Cook until steak gets slightly crispy, about 2 to 3 minutes.
  5. Add the sauce. Bring to a boil and cook until it reduces a bit, about 2 minutes.
  6. Serve over rice or noodles. Garnish with chopped green onions, if desired.
