Snickerdoodle Cookie Bars Recipe: Cinnamon Lovers Will Go Crazy

Everyone has at least one cinnamon lover in their family. In mine, it's my mom and my daughter. My mom is the one who says there's never enough cinnamon in anything, even if you double the amount. When I found a recipe for snickerdoodle cookie bars (snickerdoodles are my daughter's favorite cookies), they were baked the same day with a tweak to the recipe: more cinnamon. These chewy cinnamon cookie bars are hard to stop eating – and satisfied my mom's out-of-control love for cinnamon.

This is one of the easiest dessert recipes I've ever made. The batter mixes up quickly with just a few simple ingredients. Here is what you need to grab from the pantry and fridge for these irresistible snickerdoodle bars: butter, brown sugar, granulated sugar, eggs, vanilla extract, flour, baking powder, cream of tartar, salt and ground cinnamon. The batter is topped with a cinnamon-sugar mixture before being baked for about 20 minutes. It's hard to wait for them to cool before cutting!

Serve these chewy low-sodium cinnamon bars for dessert, as a snack or even as a fun breakfast with a cup of tea or coffee.

  • DO NOT OVERBAKE! The bars are actually best underbaked a bit, which means you need to let them sit for at least 30 minutes to set up so they'll cut into squares. It's worth the wait!
  • Originally I had though there was way too much topping, but no, it's the perfect amount.
  • I buttered my pan with a little of the melted butter, but you could use nonstick cooking spray or even line the pan with parchment paper.
  • Store the bars in an airtight container to keep them fresher longer.

Here's how to make it: 

  1. Combine the flour, baking powder, cream of tartar, salt and cinnamon in a mixing bowl. Set aside.
  2. In another bowl, add the melted butter, brown sugar and granulated sugar.
  3. Stir to combine.
  4. Add the eggs and stir until incorporated.
  5. Add the vanilla and stir to thoroughly combine.
  6. Add the flour mixture and stir until just combined.
  7. Spread the mixture into a greased or buttered 13x9-inch baking pan.
  8. Combine the topping ingredients and sprinkle evenly over the batter.
  9. Bake in a preheated 350-degree F oven for about 20 to 25 minutes, or until golden on top.
  10. Let the bars cool at least 30 minutes before cutting into squares.
