Ingredients
- 3 cups old-fashioned oats
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- dash of salt
- 1 1/4 cups (2 1/2 sticks) butter, softened
- 3/4 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 1/2 teaspoons vanilla
Here's how to make it:
- Put the oats, flour, baking soda, cinnamon and salt into a blender. Pulse until it looks like flour. (To make the cookies gluten-free, use gluten-free flour. Oats are naturally gluten-free, but to be sure, use gluten-free oats.)
- In a large mixing bowl, combine the butter, brown sugar, white sugar, egg and vanilla. Add the dry ingredients and stir to combine.
- Put by rounded tablespoons full onto cookie sheets. Bake in a preheated 350-degree F oven about 8 to 9 minutes or until set. (The number of cookies you get depends on the size of the cookies you form.)
- Remove and allow to cool a bit before serving. Store the cookies in an airtight container.
