Mediterranean Tater Tot Casserole Recipe: An Updated Way to Tot

Tater tots are loved by many and have been used in casseroles for years. This Mediterranean-inspired tater tot casserole recipe is a wonderful reboot with the addition of artichokes, spinach and feta cheese. This flavor-packed tater tot casserole is put together in the same dish you bake it in, so cleanup is a cinch!

To make this casserole recipe you will need large eggs, half and half, garlic powder, dried oregano, dried dill, black pepper, frozen artichoke hearts, frozen chopped spinach, an onion, feta cheese, frozen tater tots and salt. The ingredients are layered in a baking dish, then baked for about one hour.

Instead of being loaded with fatty cheese like some tater tot casseroles, this one has the health benefits of feta cheese, the health benefits of spinach and the health benefits or artichokes. Serve this healthier tater tot casserole recipe for dinner with your favorite side dishes.

Ingredients

  • 12 large eggs
  • 2/3 cup half and half
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon ground black pepper
  • 2 cups frozen quartered artichoke hearts, thawed and squeezed dry
  • 10 ounces (1 box) frozen chopped spinach, thawed, drained and squeezed dry
  • 1/2 cup frozen diced onions or 1 small onion, sliced
  • 6 ounces crumbled feta cheese (divided)
  • 2 cups frozen tater tots, thawed
  • 1 teaspoon salt (or to taste)

  • Add some spice by sprinkling in some crushed red pepper flakes.
  • If you want to be sure this casserole is gluten-free, use gluten-free tater tots (check the package).
  • Store any leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or microwave.

Here's how to make it: 

  1. In a 11x7-inch or similar-size baking dish sprayed with nonstick cooking spray, mix eggs, half and half, garlic powder, oregano, salt, pepper and dill. Mix well.
  2. Add in artichoke hearts, onions and spinach.
  3. Line the top with the tater tots.
  4. Sprinkle with half of the crumbled feta cheese.
  5. Bake for 45 minutes, then remove and sprinkle with the remaining feta. Return to the oven for 10 to 15 more minutes, or until the mixture is firm in the middle and golden brown. Sprinkle the top with another pinch of salt and a few grounds of pepper. Serve warm and enjoy!
