Healthy Carrot Oatmeal Breakfast Bars Recipe (Only One Pan Needed) by Jan Mostrom
I made these delicious, nutritious and aromatic breakfast bars for breakfast and everyone loved them! This wholesome, healthy carrot oatmeal bar recipe has minimal prep work and is ready in about one hour. No muss, no fuss! When the moist breakfast bars are ready, you have a warm breakfast or snack that hits the spot. This one is so delicious that you might even get picky eaters to try it!
To make this healthy oatmeal bar (read about the health benefits of oatmeal, the health benefits of yogurt and the health benefits of carrots), you will need whole milk, an egg, pure maple syrup, vanilla extract, ground cinnamon, baking powder, ground ginger, salt, ground nutmeg, old-fashioned rolled oats, raisins, fresh carrots, shredded coconut, pecans and Greek yogurt. Everything is mixed together in one (one!) pan, so you have less cleanup. Perfection!
Serve these moist carrot and oatmeal bars for breakfast or brunch, as a snack or even for dessert.

Ingredients
- 2 cups whole milk
- 1 large egg
- 3 tablespoons pure maple syrup
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 2 cups old-fashioned rolled oats
- 3/4 cup raisins
- 1/4 cup matchstick cut or grated carrots
- 1/3 cup unsweetened flaked coconut
- 1/3 cup chopped pecans
- 1/2 cup reduced-fat vanilla strained (Greek-style) yogurt

Recipe Notes
- This recipe is not really sweet. If you like things on the sweeter side you can add one extra tablespoon of maple syrup.
- I used whole-milk Greek yogurt in my recipe, but reduced-fat (without artificial sweeteners) would also work.
- Oats are naturally gluten-free. But to be sure that this recipe is gluten-free, use gluten-free oats.
- Store the breakfast bars in an airtight container.
Here's how to make it:
- In the 8x8-inch baking pan that's been sprayed with nonstick cooking spray, combine milk, yogurt, egg, maple syrup, vanilla extract, baking powder, ginger, cinnamon and nutmeg. Mix well.
- Layer oats, coconut, raisins, carrots and pecans on top.
- Gently mix until combined.
- Bake in a preheated 350-degree F oven for 45 to 50 minutes, or until the mixture is golden brown.
- Remove and serve warm or at room temperature.
