Three ingredient recipes always fascinate me. It's amazing that just three simple ingredients can transform into something delicious. This easy three-ingredient carrot bread recipe is the perfect example. Not only is it tasty, quick and easy, but the bread recipe also contains no added sugar, eggs or dairy.
To make this carrot bread, you'll need to gather the three simple ingredients: fresh carrots to shred, self-rising flour and applesauce. The kind of applesauce you pick will determine the sweetness level of the bread. If you use unsweetened applesauce, the bread with be more like, well, bread. Sweetened applesauce will give it a more dessert feel, though will still not be overly sweet. I went the more savory route and was happy with the results.
The low-sodium bread mixes up in minutes and bakes in the oven for about 45 minutes or until cooked through. The bread is delicious just sliced off and eaten as a snack or for breakfast or brunch, or slathered with butter or fruit jelly, or toasted. If you want to serve it for dessert, add a dollop of homemade whipped cream, a drizzle of honey or even serve it warm with vanilla ice cream on top. This quick carrot bread would be a nice addition to your Easter menu!

Recipe Notes
- If you want a less sweet bread, use unsweetened applesauce. For sweet bread, use sweetened applesauce.
- If you can't find cinnamon applesauce, add about 1/2 to 1 teaspoon ground cinnamon.
- Use a fine grater to grate the carrot for this recipe. I used about half of one large carrot.
- You could add chopped nuts, dates or raisins to the dough before baking.
- Store the bread in an airtight container.
- I chose not to peel my carrots. But you could peel them before grating with a vegetable peeler.
Here's how to make it:
- Put the flour and applesauce into a mixing bowl. If you don't have cinnamon applesauce, add some ground cinnamon now.
- Stir to combine. It will be a thick dough.
- Add the shredded carrots.
- Stir to combine the carrots into the dough.
- Spread the mixture into a loaf pan that's been lined with parchment paper.
- Bake in a preheated 375-degree F oven for about 45 to 50 minutes. Remove from the oven and cool before slicing.
