Watergate salad is an epic dessert in my family. Epic because my grandma made it, my mom makes it, I make it, my mother-in-law is a fan, my kids love it and it's one of the easiest dessert recipes on the planet to make. Sounds epic, right? My hat's off to whoever created Watergate Salad, which was created during the Watergate scandal.
It was no surprise when this Watergate cookies recipe caught my eye. The fluffy dessert in cookie form? Sign me up. Watergate salad is a creamy mix of instant pistachio pudding, crushed pineapple, whipped topping, pecans and mini marshmallows. While this cookie does not use all the ingredients in the batter (no crushed pineapple, whipped topping or marshmallows), the flavor is there.
To make these chewy cake-mix cookie recipe you will need a box of yellow cake mix, a box of instant pistachio pudding mix, shredded coconut, pecans, eggs and vegetable oil.
These cookies are fun to snack on when you have a sweet tooth, or serve them after dinner for an easy dessert with a cup of coffee or a tall glass of milk.
