Juicy Baked Chicken Marinara Recipe Is Fork Ready In 20 Minutes

Chicken Parmesan is classic Italian comfort food. In most chicken parmesan recipes, the chicken is breaded and fried before the rest of the ingredients are added. Not wanting to add breading to my chicken, I created this easy, low-carb chicken marinara recipe that took no time to prep or cook.

This juicy baked chicken recipe starts with boneless, skinless chicken breasts that you pound out to an even thickness (this helps them cook quicker and more evenly). The other ingredients you will need to grab include dried Italian seasoning, olive oil, spaghetti sauce (I used jarred sauce), mozzarella cheese, Parmesan cheese and optional parsley flakes for color. The gluten-free chicken cooks on the stovetop in an ovenproof skillet and ends with a quick trip under the broiler to melt the cheese.

This is a flavorful, quick and easy Italian dinner that's a blessing on busy weeknights. Serve the chicken breast over your favorite noodles or alone if you're watching carbs. Other delicious options to nest the chicken on are quinoa, creamy polenta, grits or farro. I served mine with a fresh garden salad with homemade honey mustard salad dressing.

Recipe Notes

  • Any oven-proof pan will work for this recipe. I used a large cast iron skillet.
  • I used a cheese slicer to slice a block of mozzarella cheese. You could also freshly grate the cheese.
  • For saucier chicken, drizzle with more spaghetti sauce after adding the cheeses.
  • I served mine over undressed spaghetti noodles. You could toss the noodles in spaghetti sauce, if desired.
  • Add some crushed red pepper flakes for a little kick.
  • This recipe could easily be doubled.

Here's how to make it:

  1. Season the chicken breasts on both sides with salt, black pepper and dried Italian seasoning.
  2. Heat the olive oil in an ovenproof skillet. Add the chicken and cook until golden on one side.
  3. Flip the chicken over and continue to cook until just cooked through.
  4. Top each breast with some spaghetti sauce.
  5. Top with the mozzarella cheese, Parmesan cheese and sprinkle with parsley flakes, if desired.
  6. Put the skillet under the broiler for a couple minutes to melt the cheese.
  7. Serve the chicken immediately with more Parmesan cheese, if desired.
