Ultimate Nacho Casserole Recipe Is What to Make This Weekend

In the ’80s and ’90s, nachos used to be my go-to bar food or even a quick dinner when I was single. I’ve shared many a plate of nachos with my girlfriends or devoured them all on my own! But as I’ve gotten older and have a more grown-up palate (and a husband to cook for), this dish has sort of fallen off my radar. However, this nacho casserole recipe, which seemed like a beefed-up (pun intended) version of my old favorite, really whet my appetite. I decided to give it a whirl!

Making a few tweaks to the recipe, this cheesy, flavorful pan of ooey-gooey goodness was the result. To make this quick and easy Mexican casserole recipe you will need ground beef, taco seasoning, salsa, a can of chili beans, tortilla chips, sour cream, green onions, fresh tomatoes and cheddar cheese. This ground beef casserole recipe is great served as dinner with a salad or as an appetizer with chips for your next party.

Ingredients

  • 1 pound ground beef
  • 1 package (1 ounce) taco seasoning
  • 1 1/2 cups salsa
  • 1 can (16 ounces) chili beans, drained
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1/2 cup chopped green onions
  • 1/2 cup chopped tomatoes
  • 2 cups shredded cheddar cheese

  • Sliced black olives, added along with the green onions, make a good addition!
  • The chips may be better (and remain crisper) on top of the casserole instead of underneath.
  • You can substitute canned, diced tomatoes for fresh and ground turkey for beef.
  • I used mild salsa, but you can spice it up using the hot version. Add some jalapenos for extra heat!

Here’s how to make it:

  1. Cook ground beef over medium-high heat until browned. Drain off the grease and add taco seasoning. Mix well.
  2. Stir in the salsa, reduce heat, and simmer for about 15 minutes or until the liquid is absorbed. Add the beans and cook until the mixture is heated through.
  3. Spray a 13x9-inch baking dish with nonstick cooking spray and spread the crushed tortilla chips over the bottom (see Recipe Notes). Spoon the beef mixture on top. Spread the sour cream over the beef and then sprinkle with green onions and diced tomatoes.
  4. Cover the layered mixture with cheddar cheese.
  5. Bake in a preheated 350-degree F oven for 30 minutes or until the cheese is bubbly.
