Cuisine: American
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 4
Ingredients
- 8 ounces linguine
- 1 tablespoon olive oil
- 2 tablespoons butter (divided)
- 1 pound shrimp, cleaned and deveined
- 1 tablespoon Old Bay Seasoning
- 3 - 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Here's how to make it:
- Cook the pasta according to package directions for al dente. Reserve 1 cup of pasta water then drain the pasta and set aside. You could use fettucine, spaghetti noodles, angel hair or your favorite pasta for this recipe.
- Melt 1 tablespoon of the butter and the olive oil in a skillet over medium heat. Season the shrimp with salt and pepper, to taste, and the Old Bay. Add the shrimp to the hot oil and cook until cooked through. Remove to a plate. Instead of Old Bay Seasoning you could use smoked paprika, Cajun seasoning or your favorite seasoning blend.
- Add the remaining butter and garlic. Cook for 30 seconds. Pour in the heavy cream and stir. Add the Parmesan cheese and stir until melted and smooth. Slowly add a little of the reserved pasta water until it's a loose, creamy sauce. Season with salt and pepper. You probably won't need all of the reserved pasta water. Add enough to make a smooth sauce.
- Add the pasta back to the pan along with the cooked shrimp. Toss to coat. Garnish with chopped parsley. Store the pasta in an airtight container in the fridge for up to three days. To reheat, stir in a little heavy cream or water to loosen it back up.
