20-Minute Mexican Garlic Shrimp Recipe (Camarones al Mojo de Ajo)

Camarones al mojo de ajo translates to “shrimp in garlic sauce” in English. Much like shrimp scampi, the fresh shrimp are cooked in a butter and garlic sauce. However, in this dish the garlic sauce includes Mexican spices and lime juice. Rather than being served with pasta, camarones al mojo de ajo is typically served with rice, fresh tortillas or on tostadas for a quick and easy dinner recipe.

This shrimp recipe is ready from start to finish in only 20 minutes. It’s made with many ingredients you likely already have in your pantry, and can be served on its own or as a protein in a variety of dishes.

Ingredients

  • 4 tablespoons olive oil (divided)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon kosher salt
  • 8 garlic cloves (4 minced and 4 thinly sliced)
  • 1/2 red onion, thinly sliced
  • 1 1/2 pounds large shrimp, peeled and deveined
  • 2 tablespoons butter, cut into pieces
  • 2 limes, freshly squeezed
  • 1/4 cup chopped fresh parsley or cilantro

Here’s how to make it:

  1. In a large bowl, combine 2 tablespoons of the olive oil, smoked paprika, paprika, cumin, salt and the minced garlic. Add the shrimp and toss until fully coated.
  2. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion and the sliced garlic to the skillet and cook, stirring occasionally until the onion softens, about 5 minutes. Add the shrimp and cook, stirring occasionally, until they are opaque and completely cooked through, about 5 to 6 minutes. Add the butter and cook, stirring until it is melted and well incorporated.
  3. Plate the shrimp, squeeze the lime juice on top and sprinkle with parsley or cilantro. Serve over rice, if desired.
