90-Second Fluffy Pancake In a Mug Recipe Will Exceed Expectations

Making new recipes is not only something I enjoy, but part of my job. Poor me, right? While I make lots of recipes that are absolutely delicious, the ones that make to go Wow! are a lot more rare. This pancake in a mug recipe made me happy! Not only did it turn out just like I expected for best case scenario, but I enjoyed every single bite. Every. Single. Bite. I was about to make another mug pancake, but wanted to get this breakfast recipe out to you ASAP. You need to try this pancake for one recipe!

To make this fluffy pancake recipe in a mug you just need a few simple ingredients and less than five minutes. These are the ingredients you need to gather from your pantry and fridge: flour, baking powder, granulated sugar, milk, butter and vanilla. The ingredients are put into a mug and microwaved for 60 to 90 seconds.

Drizzle the pancake with some pancake syrup or maple syrup and get ready for a quick and easy breakfast, snack or even dessert with some fruit and whipped cream that you're sure to develop an incurable longing for. How do I know that? Because I'm heading back to the kitchen now to make another one...

Recipe Notes

  • The ingredients are easiest mixed together in the mug with a fork.
  • Don't overmix the batter. Stir until just combined.
  • My husband and I don't drink milk, so I used evaporated milk for this recipe.
  • You could add some ground cinnamon into the batter.
  • The pancake is hot when it comes out of the microwave. Really hot. Let it cool a minute, if you can resist, before eating.

Here's how to make it:

  1. Melt the butter in an 8-ounce coffee mug. In a small bowl, whisk together the flour, baking powder and sugar.
  2. Add the milk and vanilla to the melted butter in the mug.
  3. Stir in the flour mixture until just combined.
  4. Microwave for 1 to 1 1/2 minutes or until set.
  5. Drizzle with maple syrup or pancake syrup and enjoy!
