Easy Broccoli Mug Omelette Recipe: This Quick Broccoli Egg Cups Recipe Is Ready in Minutes

This is breakfast fast! Use two or three eggs depending on the size of your mug and how hungry you are. You can change up the vegetables you use and it's a great way to use up leftover veggies. Zucchini, red bell pepper and spinach are good choices. You'll be hooked on this easy broccoli mug omelette recipe!

  • 2 - 3 eggs
  • 1 tablespoon milk
  • 1/4 cup cooked broccoli
  • 1/4 cup shredded cheddar cheese

  1. Butter the inside of a mug. Add the eggs and milk. Season with salt and pepper and whisk to combine.
  2. Add the broccoli and cheese. Stir.
  3. Microwave on high for about 2 to 3 minutes.
