Mouth-Watering Cheese-Stuffed Chicken Breasts Recipe (30 Minutes)

Chicken breast is a relatively inexpensive ingredient that can be cooked in so many ways. In this easy skillet chicken dinner, the chicken breasts are stuffed with three cheeses and other flavorful ingredients. This one-pan chicken recipe looks fancy, but is easy enough for Monday night after band practice.

To make this cheese-stuffed chicken you will need just a few ingredients. Here is your short shopping list: chicken breasts, olive oil, flour, dried Italian seasoning, goat or feta cheese, Parmesan cheese, gruyere cheese, garlic powder, onion powder, chopped parsley and sour cream. A pocket is carefully cut on each side of the chicken breast, then the filling ingredients are mixed and stuffed into that pocket. Secure the chicken with toothpicks and cook them in a skillet on the stove top. So quick and easy!

Serve this chicken with an ooey, gooey, cheesy creamy center for dinner with your favorite side dishes. We like to add a side of pasta to mix with the cheese filling as it oozes onto the plate.

Ingredients

Stuffing

  • 1/2 cup goat cheese or feta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated gruyere cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons sour cream

  • Put the chicken breasts on the counter about 30 minutes before stuffing. This helps the chicken cook faster.
  • Putting water into the pan helps the chicken cook without burning, and helps keep it moist.
  • You could finish cooking the chicken in the oven. To do this, sear the chicken in the olive oil in an ovenproof skillet, then bake in a 350-degree F oven for about 20 minutes or until the chicken is cooked through (165 degrees internal temperature).
  • Try different combinations of cheese to create your own unique recipe.
  • For a little heat, add some crushed red pepper flakes to the filling and/or to the outside of the chicken. 

Here's how to make it: 

  1. Combine all the filling ingredients in a mixing bowl. Season with salt and black pepper, to taste.
  2. Using a sharp knife, cut a pocket on one side of each of the chicken breasts. Season with salt, black pepper and the dried Italian seasoning. Divide the mixture between the chicken breasts inside the pocket. Secure with toothpicks. Lightly dust each breast with some flour. 
  3. Heat the olive oil in a skillet over medium-high heat. Put the chicken breasts into the hot oil and brown on both sides, about 2 to 3 minutes per side. Reduce the heat to medium-low, add the water, cover and cook until chicken is cooked through, turning once, about 10 to 12 minutes.
