This addictive taco meat queso recipe uses four simple ingredients: ground chicken (or turkey or beef), taco seasoning, Velveeta cheese and Rotel diced tomatoes. That's it! And this spicy appetizer dip recipe is ready in only about 15 minutes. So easy!
Serve this gluten-free cheese dip with tortilla chips (scoop-type chips work best), crackers or fresh vegetables as an irresistible appetizer for gatherings of any kind. - 1 pound ground chicken (or turkey or beef)
- 1 packet taco seasoning (1 ounce), plus water to make it (or make your own taco seasoning)
- 16 ounces Velveeta cheese, cut into cubes
- 1 can (10 ounces) Rotel Diced Tomatoes and Green Chilies

Recipe Notes
- I used ground chicken in this recipe, but you could use ground turkey or beef if you prefer.
- I used a taco seasoning packet, but you can make your own taco seasoning, if desired.
- Velveeta is considered gluten-free by the celiac and GF community.
- Store any leftovers (as if, ha!) in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a large skillet over medium heat, brown the ground chicken. Add the taco seasoning and 3/4 cup of water (or according to package directions). Simmer until water is absorbed.
- Add the Velveeta cheese cubes.
- Add the Rotel.
- Stir until all is melted and combined.
- Serve in your favorite dip bowl or ramekins or small casserole dish alongside tortilla chips, crackers, vegetables, tortillas, etc.
