I just spent a few days with one of my best girlfriends. We met in high school and have been great friends ever since. It's one of those friendships that you can just step back into. No matter how much time has passed, it just doesn't matter. We just fall right back into the rhythm.

We decided to spend lots of time just nesting in her home and that included eating wholesome, nourishing meals together. We decided to make this delicious one-pot lemon chicken pasta recipe with fresh healthy spinach, and we were so happy with how deliciously it turned out. We had plenty of time to visit and and still make an easy, nourishing pasta dinner to enjoy together.

All you need to make this easy lemon chicken pasta recipe is pasta, olive oil, boneless chicken breasts, garlic, dry white wine, fresh lemons for zesting and juicing, crushed red pepper flakes, grated Parmesan cheese, salt and black pepper. Serve this lemony pasta and chicken with your favorite side dishes (a salad or bread is always a good idea!), though it is a complete meal on its own.

Ingredients

• 8 ounces pasta
• 2 tablespoons extra-virgin olive oil
• 1 pound boneless, skinless chicken breast or thighs, cut into bite-size pieces
• 1/2 teaspoon salt
• 1/4 teaspoon ground pepper
• 4 cloves garlic, minced
• 1/2 cup dry white wine
• juice and zest of 1 lemon
• 10 cups chopped fresh spinach
• crushed red pepper flakes, for serving (optional)
• grated Parmesan cheese, for serving

Recipe Notes

• Use whatever pasta shape you like. Think penne, rotini, fusilli, bowties or your favorite.

• Cut your chicken into uniform pieces so they cook evenly.
  

• You can use gluten-free pasta, whole-wheat pasta, regular pasta or whatever type you like best. Gluten-free pasta should be undercooked so it doesn't fall apart.

• If you don't like spinach, try this recipe with kale, Swiss chard or your favorite greens.

Here's how to make it:

1. Cook pasta according to package directions for al dente. Drain and set aside.
2. While the pasta cooks heat oil in an oven-safe pan with high sides over medium-high heat. Add chicken, salt and pepper. Cook, stirring, until is l just cooked, about 3 to 5 minutes.
   
   
3. Add garlic and cook about 1 minute.
   
4. Stir in wine, lemon juice and zest. Bring to a simmer.
   
5. Turn off stove and stir in spinach.
   
6. Add the cooked pasta.
   
    
7. Cover the pan until the spinach is wilted.
   
   
8. Serve pasta warm with grated Parmesan and crushed red pepper flakes, if desired.
