I made this easy one-pan Greek chicken recipe last night, and it was so simple and delicious!! Everyone loved this baked chicken recipe. I had quick and easy preparation in one large plan and the cleanup was a snap.
The lemon, shallots and garlic make such a great base for the marinade, and the chicken thighs are so tender and juicy. This is a high-protein dinner you will look forward to serving your family. (Check out the health benefits of protein.) This is also a wonderful meal-prep recipe.
To make this easy Greek chicken you will need lemons for zesting and juicing (check out the health benefits of lemon), shallots, fresh garlic, olive oil, dried oregano or Italian seasoning, kosher salt, paprika, black pepper, boneless chicken thighs and fresh parsley for serving. If chicken breasts are more to your liking you can substitute those instead.
Serve this Mediterranean Diet-inspired, mouth-watering, gluten-free, high-protein chicken dinner over rice or another grain. Add a simple grilled vegetable and you’ll have an easy winner dinner that's ready in a snap!

Ingredients
- 3 small lemons, zested and juiced
- 2 shallots, finely chopped
- 3 - 5 cloves garlic, minced
- 1/8 - 1/4 cup olive oil
- 3 teaspoons dried oregano or Italian seasoning
- 1 teaspoon paprika
- 2 pounds boneless, skinless chicken thighs
- 2 tablespoons fresh parsley, chopped (optional)
Here's how to make it:
- Put the chicken into a baking dish. Add the remaining ingredients on top of the chicken. (Feel free to substitute chicken breasts and adjust time, as needed, to proper internal temperature.) Season to taste with salt and black pepper. (I use about 1/2 teaspoon freshly ground black pepper and 1 teaspoon kosher salt.)
- Use tongs to coat both sides of the chicken and mix the marinade around the thighs. Cover and place in the refrigerator for 1 to 2 hours. (If you don’t have time to let the chicken marinade, you can also just bake without the marinating time. The chicken will have a bit less flavor but is still delicious!)
- Bake the chicken in a preheated 400-degree F oven for 30 minutes, or until cooked through. (Chicken is cooked through at 165 degrees F on a food thermometer.) Sprinkle the top with chopped parsley if desired. Serve over rice or other grain, adding some of the marinade juices over the top of the chicken, and enjoy!
