Easy Slow-cooker Chicken Parmesan Meatballs Recipe Has An Added Bonus Inside

Here’s an easy way to make chicken parm: turn it into meatballs and toss them into a delicious sauce in a slow cooker! While you’re at work or out with the kids, those ooey-gooey balls of deliciousness will be doing their thing and will be ready to serve with a sprinkle of Parmesan cheese and a big hunk of crusty bread when you’re all ready to eat.

Inspired by EatingWell, this slow-cooker chicken parmesan meatballs recipe only requires one bowl and a few utensils and is yummy served over pasta or all by itself. And if you roll the meatballs smaller, they’re the perfect cold-weather appetizer for your next party. Just keep the slow cooker on warm and let guests spear them right out of the pot!

To make the homemade tomato sauce you will need a can of diced tomatoes, an onion, garlic, dried basil, dried oregano and salt. That's it! For the meatballs grab a pound of ground chicken, an egg, Parmesan cheese, breadcrumbs, dried basil, dried oregano, garlic powder, salt and fresh mozzarella balls.

Meatballs

  • 1 pound ground chicken
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fine breadcrumbs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 10 cherry-size fresh mozzarella balls

  • You can substitute ground turkey for chicken.
  • If you use the small pearl-sized mozzarella balls, you’ll get approximately 30 meatballs.
  • If you like spice, use fire-roasted, salsa-style tomatoes instead of plain diced tomatoes. Be sure to have your bread ready!
  • Use your (clean) hands to incorporate the meat mixture together.
  • Make sure to completely seal the meatball around the cheese ball.

Here’s how to make it:

  1. To make the sauce, mix the tomatoes, garlic, basil, oregano and onions in a slow cooker.
  2. Meanwhile, combine the ground turkey with the egg, parmesan cheese, breadcrumbs, spices and salt in a bowl.
  3. On wax paper, spoon out the turkey mixture (about the size of a golf ball) and flatten the ball into a disc shape. Place the mozzarella ball in the center and fold the sides of the turkey mixture over the ball and seal so no cheese is showing. Roll into a ball between your hands.
  4. Repeat with the remaining turkey mixture.
  5. Add the meatballs to the slow cooker and spoon some sauce over the top of the balls.
  6. Cook for 5 hours on low or about 2 1/2 hours on high.
  7. Serve over pasta or by themselves.
