One-Pan Garlic Mushroom Creamed Chicken Recipe: Slow-cooked Taste In 30 Minutes

Sometimes you want something thick, rich, creamy and filling, but don't want to spend a lot of time making it. Enter this quick chicken recipe in a creamy garlic mushroom sauce. Sounds amazing, doesn't it? The best part is it's on the table in about 30 minutes.

This chicken dinner starts with skinless, boneless chicken breasts, which is always a good ingredient for quick meals. You will also need olive oil, butter, fresh mushrooms, garlic, flour, chicken broth, white wine (see Recipe Notes), heavy cream and grated Parmesan cheese. 

This creamy chicken dish cooks in one pan, so after you enjoy it over rice, pasta, egg noodles or your favorite grain, cleanup is a snap. To make it a complete dinner, add a vegetable or salad.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, cut into small bite-sized pieces
  • 4 tablespoons butter
  • 2 cups sliced button mushrooms
  • 4 cloves garlic, chopped
  • 1 tablespoon flour
  • 1/4 cup chicken broth
  • 1/4 cup white wine 
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

  • If you don't like cooking with wine, use 2 tablespoons of lemon juice instead.
  • You could add some fresh baby spinach to the sauce.
  • You could use Asiago or gruyere cheese instead of Parmesan. 

Here's how to make it: 

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper and add it to the hot oil. Cook, stirring a couple of times, until browned and cooked through, about 8 minutes. Remove the chicken to a plate.
  2. Add the butter and mushrooms. Cook, stirring often, until mushrooms soften, about 5 minutes.
  3. Add the garlic and cook 30 seconds. Sprinkle in the flour and cook, stirring, for 1 minute. 
  4. Pour in the chicken broth, white wine and cream. Stir. Add the cheese and cook, stirring, until cheese melts.
  5. Put the chicken back into the pan and cook until the sauce thickens, about 5 minutes. Season with salt and pepper. Garnish with fresh chopped herbs, if desired.
