Blondies, which are basically a vanilla version of a brownie, are the perfect dessert or sweet snack. These easy blondies feature seasonal apples in the batter and are pretty amazing.

To make this quick and easy apple blondies snack recipe, you will need just a few ingredients from your pantry and fridge. Here's what you need to gather: flour, baking powder, salt, ground cinnamon, nutmeg, butter, brown sugar, vanilla extract, eggs and apples.

Serve these moist apple blondies for dessert, hot or cold. If you serve them warm, add a scoop of vanilla ice cream on top.

Fun Fact: Blondies are said to have originated during World War II. During WWII, ingredients were being rationed, so some ingredients, like chocolate, were not available.

  • Granny Smith apples are a good choice for this recipe, but use your favorite apples.
  • The batter will be thick. Do not overmix the batter.
  • Store the blondies in an airtight container for up to five days.
  • To get your egg to room temperature faster, put it into a bowl of warm water.

Here's how to make it: 

  1. In a mixing bowl, stir together the flour, baking powder, salt, ground cinnamon and nutmeg.
  2. In another mixing bowl, stir together the melted butter and brown sugar until combined. Add the egg and vanilla. Mix well. 
  3. Add the dry ingredients to the wet ingredients until just combined. Fold in the apples. 
  4. Spread the batter into an 8x8-inch baking pan that's been lined with parchment paper that comes up over the sides. Bake in a preheated 350-degree F oven for about 25 minutes or until a toothpick comes out clean. Cool before cutting into squares.
