This Easy Mexican Taco Soup Recipe Is a Little Better Than the Rest

We had our first cool fall night and I just wanted to cook something warm, delicious and healthy. Enter this taco soup recipe to warm you up from the inside out. This ground beef soup recipe is so good and easy to put together. The hearty Mexican soup will be in your soup bowl in about an hour.

To make this taco soup for dinner tonight, you will need a few ingredients. Here is your easy shopping list: ground beef, onion, garlic, olive oil, jalapenos, tomato paste, chopped green chiles, fire-roasted tomatoes, canned pinto beans and black beans, broth, corn and cilantro.

What makes this gluten-free soup just a little better than the rest? Using a homemade taco seasoning mix. It's so easy to whisk together, and adds even more flavor to this tasty soup. Ladle the soup into soup bowls and top with sour cream, tortilla chips, avocado or guacamole or your favorite toppings. This soup is perfect for lunch or dinner.

Ingredients

Mexican Spice Mix (See Recipe Notes)

Soup 

  • 1/4 cup extra virgin olive oil
  • 1 large onion chopped, plus more for serving
  • 4 garlic cloves, finely chopped
  • 1 pound ground beef
  • 1 - 2 jalapeños, finely chopped, to taste, plus more for serving
  • 1 tablespoon tomato paste
  • 2 cans (4 ounces each) chopped green chiles (omit if your tomatoes have chilis included)
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cans (15 ounces each) diced fire-roasted tomatoes or 2 - 3 large fresh tomatoes, chopped
  • 2 1/2 cups low-sodium chicken broth, vegetable broth or water
  • 2 cups frozen fresh or whole kernel corn
  • handful of cilantro leaves and tender stems, roughly chopped, plus more for serving

Recipe Notes

  • You can use a premade packet of taco seasoning instead of making homemade.
  • Instead of ground beef, you can use ground chicken, ground pork or ground turkey.

Here's how to make it: 

  1. If you are making your own taco seasoning (recommended!), mix all the seasoning ingredients together in a bowl. Set aside.
  2. Heat the oil in a large soup pot. Add the onion and cook until soft, about 5 minutes. Season with salt and pepper, to taste.
  3. Add the ground beef and cook, breaking it into pieces as you stir, until meat is browned. Season with salt and pepper, to taste.
  4. Add the taco seasoning and jalapeno and stir for 1 minute. Add the tomato paste into the center and let it sit for about a minute while it heats up, then blend it into the meat mixture.
  5. Add chopped green chiles with their juices (unless they are in your tomatoes), the beans and more salt, to taste. Add the tomatoes with their liquid and broth. Turn heat to medium/high and bring mixture to a boil. When mixture starts to boil reduce heat to low and cover stirring occasionally for about 20 minutes.
  6. Taste the soup and add more salt, pepper and/or chili powder, if needed. Add your corn and cilantro, cover and warm until corn is heated through. Serve warm with toppings and enjoy!
