I have an old friend who is an organic farmer, and his wife uses the fruits of her husband’s labor to dream up incredible dishes for their family, which she regularly posts on Facebook. The problem is she only posts photos – no actual recipe. Recently she posted an appetizing ground chicken bowl that I was dying to try to make.
I had a pound of lean ground beef, so I substituted ground beef for chicken, guessed at the measurements of everything and added a few ingredients of my own. This tasty, Mexican-inspired bowl recipe was the result! This easy ground beef bowl recipe is high in fiber and high in protein! To make this hearty beef bowl you will need lean ground beef, a sweeet potato, a can of black beans, fresh corn, dried cilantro, ground cumin, salt, black pepper, garlic salt and cheese.
Cooking Tip: I use fresh corn on the cob, but you can use 3/4 cup of frozen or canned corn instead. The Pampered Chef kernel cutter (pictured) makes slicing the corn off the cob easy!
The ground beef recipe makes a delicious lunch or dinner. Right after it was done, I had it for lunch and it was so good that I went back for seconds!

Ingredients
- 1 pound lean ground beef
- 1 large sweet potato, microwaved, peeled and cubed
- 15 ounces (1 can) black beans, drained
- 1 - 2 cobs of corn, cooked for 5 minutes and cut off the cob
- 1 teaspoon dried cilantro
- 1 teaspoon ground cumin
- garlic salt, to taste
- mozzarella, cheddar or pepper jack cheese, shredded
- wedge of lime, as garnish (optional)
Here’s how to make it:
- Use a fork to poke holes in the sweet potato and microwave it for 3 minutes on high to soften a bit. When the potato has cooled, peel and cube.
- Over medium to low heat, cook the ground beef until no longer pink, breaking up the chunks. Drain off the grease (there shouldn’t be much if you’re using lean burger) and return to the burner. (Ground turkey or chicken can be substituted for ground beef.)
- Add the corn, black beans, sweet potato cubes and mix to incorporate.
- Add spices, salt and pepper, garlic salt and stir. Taste and add more if desired. Cook just until everything is heated through, and sweet potatoes reach desired softness, no more than 6 or 7 minutes. If overcooked, the hamburger will dry out and the sweet potatoes will fall apart. Sprinkle with shredded cheese before serving. Serve with a drizzle of or a wedge of lime.
