Cottage cheese is having a comeback. People are adding cottage cheese to everything – from sauces to macaroni and cheese to salad dressing to guacamole – because it is a versatile high-protein food. One cup of cottage cheese contains about 25 grams of healthy protein. Not bad, plus cottage cheese has other health benefits. Now we've added this healthy ingredient to mashed potatoes!
These easy, creamy high-protein mashed potatoes contain 2/3 cup of cottage cheese, which not only adds protein but also creaminess to the potatoes. To make these mashed potatoes you will need Yukon gold potatoes, which have a naturally buttery flavor, cottage cheese, shredded cheese and butter. (Check out the health benefits of protein.)
Serve these cottage cheese mashed potatoes as a side dish with chicken, beef, pork, lamb or your favorite meal. We like them with meatloaf, chicken fried steak and beef tips. You cannot go wrong.

Ingredients
- 2 pounds Yukon gold potatoes, peeled and cut into cubes
- 2/3 cup cottage cheese
- 1/3 cup shredded cheese
- 2 teaspoons butter
Here's how to make it:
- Cook the potatoes in boiling water until tender, about 15 to 20 minutes. Drain. (For the creamiest potatoes, be sure to drain them well after boiling. You could use russet, red or white potatoes for this recipe.)
- Add the cottage cheese, shredded cheese and butter. Season with salt and pepper. (To add even more flavor and color, add in a couple teaspoons of your favorite chopped herbs. Dill, parsley or chives are a standout. Use your favorite cheese! Try cheddar, gruyere, mozzarella, fontina, colby-jack, pepper-jack or even Swiss.)
- Mash until smooth. Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
