Serve this protein-rich guacamole with baked chips or cut-up fresh vegetables for a snack. You could also use it as a spread on English muffins, toasted bread, bagels or even sandwiches for lunch or dinner.

- 1 large avocado, peeled and pitted
- 1 cup cottage cheese
- 2 - 3 garlic cloves, minced
- 2 tablespoons minced red onion
- 3 - 4 teaspoons lemon juice (or to taste)

- Mash the avocado in a bowl.
- Add the cottage cheese, garlic, red onion and lime juice. Mash to combine. Season with salt and pepper, to taste.
