When you think of muffins, you may think of sweet. But these high-protein cottage cheese muffins are simple, just slightly sweet and savory ... and delicious! Light and fluffy, cottage cheese muffins make a delicious snack or serve as a quick breakfast. The muffins are made with all-purpose flour and whole-wheat flour, and creamy protein-rich cottage cheese (learn about the health benefits of cottage cheese).
To make these light and fluffy cottage cheese muffins you'll need butter, brown sugar, an egg, milk, cottage cheese, all-purpose flour, whole-wheat flour, baking soda and baking powder. An optional ingredient is raisins. If you like raisins, they add a bit of sweetness to the muffin, and you'll get the health benefits of raisins. The ingredients are simply stirred together then baked in muffin tins until cooked through and golden. The cottage cheese muffins smell heavenly as they bake!

Ingredients
- 1/4 cup unsalted butter, at room temperature
- 1/2 cup brown sugar
- 1 egg
- 1/4 cup milk
- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 cup whole-wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup raisins (optional)
Here's how to make it:
- Cream together butter and brown sugar with a whisk or an electric mixer. Add the egg and milk. Stir in the cottage cheese.
- Whisk together the flours, baking soda and baking powder. Add the wet ingredients to the dry ingredients until just combined. Spoon the batter into 12 greased muffin cups or use baking liners. (You could add spices to the muffin batter before baking. Think warm spices like ground cinnamon, cardamom, star anise and ginger.)
- Bake in a preheated 375-degree F oven for about 20 minutes or until a toothpick comes out clean. This easy cottage cheese muffin recipe can be frozen. Simply pop the muffins into a freezer bag. To reheat, wrap in a paper towel and microwave for about 1 minute. Store the fresh-baked muffins in an airtight container.
