Most everyone loves buffalo chicken wings. Dipping those crispy, spicy hot wings in blue cheese dressing as you munch on celery sticks has definitely become a thing. But what if you took all the flavors of buffalo chicken and turned them into a flavorful, moist and juicy meatball? Yum, right? Glad I thought of it!
These meatballs are delicious served for dinner or as a game-day appetizer with toothpicks. You don't need a lot of time or ingredients to make these easy buffalo chicken meatballs. Here is your shopping list: ground chicken, an egg, fresh garlic, butter, hot sauce, blue cheese, panko breadcrumbs, celery and onion powder. The ingredients are mixed together, shaped into meatballs and baked.
You can serve these tasty meatballs as a snack with blue cheese dressing or ranch dressing on the side for those who like to dip. (And who doesn't?)

Ingredients
- 1 pound ground chicken
- 1 large egg
- 2 cloves garlic, minced
- 4 tablespoons butter
- 1/3 cup hot sauce (see Recipe Notes)
- 1/3 cup crumbled blue cheese
- 1/3 cup panko breadcrumbs
- 2 stalks celery, finely chopped
- 1/2 teaspoon onion powder

Recipe Notes
- I prefer to use Frank's RedHot Sauce, but you can use your favorite.
- This recipe can easily be doubled or tripled if serving for game-day snacking.
- To make this recipe gluten-free, use gluten-free breadcrumbs.
- Store leftovers in the refrigerator or freeze for up to three months.
Here's how to make it:
- Mix butter, hot sauce and blue cheese in a small saucepan over medium heat and season with salt. Whisk until butter and cheese have melted, about 2 minutes. Remove from heat and cool.
- In a medium bowl, stir together breadcrumbs, celery, garlic, egg and onion powder. Season with salt and pepper. Add chicken and half the hot sauce mixture and mix until combined.
- Form 1- or 2-inch meatballs and transfer to a baking sheet or baking dish that's been sprayed with nonstick cooking spray. Bake in a preheated 400-degree F oven until lightly golden, 15 to 20 minutes. Remove from the oven and drizzle the remaining sauce over the meatballs before serving.
