- 1 onion, chopped
- 3 carrots, diced small
- 2 ribs celery, diced
- 1 teaspoon Italian seasoning

- 2 cups cooked, shredded chicken

- Heat the olive oil in a large soup pot. Add the onions, carrots and celery. Cook until onions are soft, about 3 minutes.
