The soup cooks up on the stovetop in about 25 minutes. The only prep is chopping the vegetables.

  • If you don't have leftover chicken, you can use a rotisserie chicken for this recipe.

Here's how to make it: 

  1. Heat the olive oil in a large soup pot. Add the onions, carrots and celery. Cook until onions are soft, about 3 minutes.
  2. Add the chicken broth, Italian seasoning, salt and black pepper, to taste. Bring to a boil, reduce the heat and cook for 15 minutes. 
  3. Add the pasta and chicken. Cook until pasta is al dente, according to package directions. Taste and add more seasonings, if needed. Garnish with fresh parsley, if desired.
