Creamy 6-Ingredient Red Beans & Rice Casserole Recipe With Sausage Is How to Start the Week

Casseroles are always a favorite at my house. It's so easy to throw a casserole into the oven for dinner. Not only do you have a delicious dinner that night, but you can reheat it for leftovers during the week. Another favorite is red beans and rice, which I thought would be perfect turned into a casserole. And it was!

This creamy red beans and rice casserole recipe is a hearty, filling and comforting dish that has minimal prep and just a few ingredients. Here is your shopping list for this Cajun casserole: a box of dirty rice mix, smoked sausage, two cans of red beans, a can of cream of chicken soup, sour cream and green onions. The sausage and onions are cooked in a skillet, then are mixed with the remaining ingredients and baked in the oven until hot and bubbly.

Serve this sausage and rice casserole with a salad or a fresh vegetable on the side – and don't forget a bottle of hot sauce on the side! The leftovers reheat well in the microwave for lunch or dinner the next day.

Ingredients

  • 1 box (8 ounces) dirty rice mix (I used Zatarain's dirty rice mix)
  • 1 pound smoked sausage or andouille sausage, chopped
  • 2 cans (14 ounces each) petite red beans, rinsed and drained
  • 1 can (10 ounces) cream of chicken soup
  • 8 ounces sour cream
  • chopped green onions

Recipe Notes

  • I used a combination of smoked sausage and andouille sausage.
  • If you like spice, add some hot sauce to the casserole and serve with a bottle of hot sauce on the side. I used Tabasco sauce.
  • If you can only find the family-size dirty rice mix (12 ounces), you can use that. The casserole will be less creamy.
  • For a little crunch, you could top the casserole with a can of french fried onions.
  • If you can't find petite red beans, use kidney beans.

Here's how to make it: 

  1. Cook the chopped sausage and onion in a skillet until sausage is browned and onion is soft, about 5 minutes.
  2. Add the dirty rice mix and the amount of water called for on the box. Add some chopped green onions, if desired. Cover and cook the rice according to package directions.
  3. When rice is just tender, turn the heat off. Add the rinsed red beans, cream of chicken soup and sour cream. Mix well.
  4. Pour the mixture into a 13x9-inch baking pan that's been sprayed with nonstick cooking spray.
  5. Sprinkle the top with chopped green onions.
  6. Bake in a preheated 350-degree F oven for about 30 minutes.
