Jimmy Buffett's Cheeseburger in Paradise Casserole Recipe For Parrot Heads

When I thought of Jimmy Buffett, he was on an island playing and singing his music, sipping on a margarita, eating fresh fruit, grilled seafood and other tropical delicacies – not slicing into a ground meat casserole. But, apparently the legendary singer and songwriter enjoyed casseroles like the rest of us. Being a fan of the late singer, I had to try Jimmy Buffett's Cheeseburger in Paradise casserole recipe.

This budget-friendly recipe has quick and easy prep, and bakes up in less than 30 minutes. I'm betting you have most of the ingredients already to make this easy casserole recipe: ground beef, onion, seasoned salt, garlic powder, Worcestershire sauce, cheese, milk, baking mix and eggs. The ground beef and onion are cooked then seasoned with the garlic powder, seasoned salt and Worcestershire sauce. That's the first layer of the casserole. The second layer is cheese followed by a mixture of baking mix, eggs and milk. Bake it up and get ready to sit down to a very tasty dinner.

To keep with the cheeseburger theme, the side dish I decided to serve with my casserole was a salad made with lettuce, tomatoes, onion and grated cheddar cheese. But try it with a side of vegetables for a complete family dinner.

  • I doubled the recipe and baked one in a disposable pan and froze it for later.
  • Add in some chopped jalapeno or serrano peppers for a little heat.
  • Jimmy probably wouldn't object to substituting ground turkey for the ground beef. 

Here's how to make it: 

  1. Cook the ground beef and onion in a skillet until cooked through, about 5 minutes. Drain if you have excess grease.
  2. Add the seasoned salt, garlic powder and Worcestershire sauce. Stir and turn off the heat.
  3. Put the seasoned meat into a greased pie plate or casserole dish.
  4. Top with the shredded cheese.
  5. In a mixing bowl, whisk together the baking mix, milk and eggs until smooth.
  6. Pour the mixture over the cheese.
  7. Bake in a preheated 400-degree F oven about 25 minutes or until a knife comes out clean.
