We all know that salad is good for us, but some salad dressings can make all those healthy vegetables far less healthy. For instance, creamy dressings like ranch and Caesar are among the least healthy dressing options. Generally speaking, vinaigrette dressings are the healthiest. The good news is that they are delicious, too! Balsamic vinaigrette is my favorite dressing, which is a win-win. The homemade salad dressing is tasty and has healthy benefits, too.

Here is a healthy caramelized balsamic vinaigrette recipe from the Mayo Clinic. Drizzle this tangy dressing over your salads or serve as a dipping sauce. You can also drizzle it over grilled meat, vegetables, caprese salad and bruschetta, or use it for bruschetta chicken.

  • A dietitian’s tip from the Mayo Clinic: If you store leftover vinaigrette in the refrigerator, the dressing will solidify. To return it to liquid form, gently warm it in the microwave or a saucepan for a few seconds.
  • Instead of granulated sugar, use your favorite sugar substitute.

Here’s how to make it:

  1. Heat a small saucepan over medium-low heat. Add water and sugar. Cook until sugar begins to caramelize. Add the balsamic vinegar, oil and garlic. Season with salt and black pepper, to taste.
  2. Remove the saucepan from heat. Stir the dressing and set aside to cool. Remove the garlic with a strainer and throw away. Serve vinaigrette immediately or store in the refrigerator in a covered container.
