My latest salmon dinner recipe has a Cuban cocktail flair to it. This simple four-ingredient mojito salmon recipe is a moist and refreshing seafood dinner that's ready in about 30 minutes.

Cuba is said to be the birthplace of the mojito, although the refreshing mint and lime cocktail's exact origin is still unknown. Apparently, South American Indians seeking remedies for various tropical illnesses went ashore on Cuba and came back with ingredients to use as medicine: aguardiente de caña ("burning water," a form of rum made from sugar cane) mixed with local ingredients including lime, sugarcane juice and mint. Delicious medicine, to be sure!

The shopping list for this mojito salmon recipe includes fresh salmon, fresh mint leaves, fresh lime juice and olive oil. You prepare the mojito-style sauce then bake the salmon in the sauce for about 20 minutes – and cheers! You've got a savory salmon dinner with flavor that will make you say muchas gracias.

  • 1 pound (16 ounces) fresh salmon filet
  • 3 tablespoons extra virgin olive oil
  • juice of 2 limes (fresh squeezed is best), plus additional for garnish, if desired
  • 3 tablespoons fresh mint leaves, chopped, plus additional for garnish, if desired

  • I prefer to squeeze my own lime juice, but in a pinch, you can use bottled lime juice.
  • I grew the mint I used in this recipe in my backyard garden, making it a true farm-to-table recipe.
  • I used parchment paper to line my baking pan, but you also could use aluminum foil.
  • You can garnish this recipe with additional lime slices and mint leaves, if desired.

Here's how to make it:

  1. Place the salmon filet in a casserole dish or baking pan lined with parchment paper or aluminum foil.
  2. Pour the sauce over the salmon, ensuring the salmon is covered in the sauce. Season with salt and pepper, if desired.
  3. Bake the salmon at 350 degrees F for about 20 minutes, or until desired doneness.
  4. Garnish with lime slices and fresh mint leaves, if desired, and serve immediately.
