Simple 3-Ingredient Baked Cabbage Wedges Recipe Is Side Dish Perfection

Cabbage is a nutritional powerhouse that's loaded with vitamin C, vitamin K and fiber, which many of us do not get enough of daily. Cabbage may also help with our digestive system, improve heart health and help with inflammation.

Here is a simple three-ingredient roasted cabbage recipe with only healthy ingredients: cabbage, olive oil and lemon. (Olive oil and lemon come to the table with health benefits, too!) The cabbage is brushed with the olive oil, seasoned with salt and black pepper (black pepper has health benefits, too), drizzled with fresh lemon juice and baked until tender. So simple!

Serve this cabbage side dish with whatever protein you enjoy. Keep it vegetarian by serving it with crispy tofu.

  • 1 head green cabbage, cored and cut into eight wedges
  • 1/4 cup olive oil
  • 1 lemon, cut into wedges

  • For easier cleanup, cover the bottom of the baking dish or sheet pan with aluminum foil.
  • Sprinkle with crushed red pepper flakes for a little spice.
  • Purple cabbage can be used instead of the green cabbage.

Here's how to make it: 

  1. Put the cabbage into a baking dish or on a baking sheet. Generously brush all sides with the olive oil. Season with salt and pepper. Squeeze desired amount of fresh lemon juice over the top. 
  2. Bake in a preheated 425-degree F oven for about 15 minutes. Flip the cabbage over and continue to bake until cabbage is tender, about 10 to 15 minutes more. Serve with extra lemon wedges.
