Crispy Parmesan Baked Carrots Recipe With a Cheesy Crust Elevate Your Carrot Game

Carrots can get a bit boring. I'm always on the lookout for exciting new carrot recipes. Some of my favorites are roasted carrots with carrot top pesto, garlic Parmesan roasted carrots, air fryer carrots and these crispy Parmesan baked carrots. Not only are the carrots coated in a flavorful marinade, but create a crispy Parmesan crust on the bottom as they bake.

To make these roasted carrots you will need the following simple ingredients: carrots, olive oil, fresh garlic, smoked paprika, ground cumin, crushed red pepper flakes and freshly grated Parmesan cheese. The carrots are cut into long, thicker planks, tossed in the marinade ingredients, then the bottom is coated with cheese. Bake for about 20 minutes (ovens vary) until the carrots are tender on the top and crispy on the bottom.

Serve these flavorful baked carrots as a side dish with dinner. I served mine with a grilled flank steak and tomato cucumber salad.

Recipe Notes

  • If you don't want any spice, simply omit the crushed red pepper flakes.
  • Be sure to use a nonstick baking dish. Because of the Parmesan cheese, these carrots can stick if you use the wrong pan.
  • If you don't like to peel your carrots, simply scrub them and leave the peel on.
  • I cut this recipe in half to feed the two of us.

Here's how to make it:

  1. Peel and slice the carrots in half lengthwise, then in half again so that the carrots all have flat sides.
  2. In a mixing bowl, stir together the olive oil, garlic, smoked paprika, cumin and red pepper flakes. Season with salt and black pepper, if desired.
  3. Toss the carrots in the marinade to completely coat.
  4. Put the Parmesan cheese into a plate. Press one side of the carrot into the cheese so it sticks. Repeat with remaining carrots.
  5. Sprinkle a little Parmesan onto the bottom of a nonstick (make sure it's nonstick) baking dish. Set the carrots with the cheese down in a single layer in the baking pan.
  6. Bake in a preheated 400-degree F oven for about 20 to 25 minutes or until carrots are tender and bottoms are crispy.
