One-Pan Chicken Fajita Casserole Recipe Is Ready in About 30 Minutes

This easy chicken fajita casserole recipe was a big hit with friends who came over for dinner. One oven-proof skillet was all I needed to make this delicious Mexican recipe that filled us all and had very little cleanup afterwards. We added guacamole, sour cream, pico de gallo and freshly made tortilla chips for this very simple and satisfying casserole dinner.

You should make this fantastic chicken fajita casserole for dinner tonight! Here's your simple shopping list: cooking oil, sweet peppers, onion, chili powder, garlic powder, ground cumin, salt and black pepper, cooked chicken meat, a lime, jarred salsa, corn tortillas, shredded cheese and fresh cilantro. The ingredients are first cooked on the stovetop, but finish cooking in the oven. Quick, simple and so flavorful!

A side of refried beans, Spanish rice or cilantro lime rice would be a wonderful addition to this meal.

Ingredients

  • 3 tablespoons cooking oil 
  • 2 sweet peppers (red, yellow or orange), sliced thinly
  • 1 medium onion, halved and sliced thinly
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 1/4 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 3 cups cooked chicken thighs, cut into bite-size pieces 
  • juice of 1 lime
  • 2 cups jarred mild salsa
  • 4 (6-inch) corn tortillas, cut into quarters
  • 1 cup shredded cheese (Mexican blend, Monterey jack or cheddar)
  • 1.4 cup chopped fresh cilantro (optional)

  • Chicken breast could be substituted for the chicken thigh meat. 

Here's how to make it: 

  1. Combine all the spices in a small bowl and mix to combine. Set aside 1 teaspoon of the spice mix in a separate bowl.
  2. In an oven-proof skillet over medium-high heat, add the oil. When hot, cook the onions for about 2 minutes. Add the peppers and continue to cook for another 2 minutes. Add spice mixture, saving the 1 teaspoon to the side.
  3. Add cooked pieces of chicken and last teaspoon of seasoning and mix. Add salsa and lime juice and tortillas and fold until the tortillas are mixed in. Continue to cook for about 2 more minutes and then turn off the stove. Sprinkle with cheese.
  4. Bake in a preheated 350-degree F oven for about 15 minutes or until cheese is melted. Remove and sprinkle with cilantro.
