Easy Summer Fruit Oatmeal Recipe Is Loaded With Peaches & Berries

This easy and delicious recipe for summer fruit oatmeal takes advantage of all the juicy ripe peaches and berries that are in season right now, making the oatmeal naturally sweet. This oatmeal recipe is so tasty, you won't even realize how nutritious it is. So load up on those summer fruits and make this wholesome recipe for your next breakfast or brunch!

Ingredients

  • 3 3/4 cups water
  • 1/2 teaspoon salt
  • 2 cups rolled oats (I used gluten-free quick cook oats)
  • 1 tablespoon light brown sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 peach, pitted and diced
  • 1/2 cup strawberries, sliced
  • 1/2 cup chopped nuts (walnuts or pecans), optional
  • berries of your choice, for garnish (optional)
  • 1/4 cup milk of choice (optional)

Recipe Notes

  • I added walnuts to my oatmeal to increase fiber and flavor, but nuts are optional.
  • I topped my oatmeal with fresh blueberries, but additional berries are optional.
  • For creaminess, I added 1/4 cup almond milk to my oatmeal, but that is optional.

Here's how to make it:

  1. Add the water and salt to a large saucepan. Bring to a boil. Add in the oats, reduce heat to low and stir until combined. Stir in the brown sugar, cinnamon and vanilla. Cook for a few minutes, stirring continuously, until oatmeal is done (according to package directions).
  2. Add in the peaches and strawberries, and walnuts, if using. Stir until all ingredients are blended and fruit is warm and soft.
  3. Serve immediately. Garnish with berries of choice, if desired. Store in the refrigerator in an airtight container for up to four days. If reheating, add 1/4 cup milk to each serving and warm in microwave.
