I discovered this salad dressing when making my roasted vegetables quinoa salad recipe. The light lemon salad dressing was so good on that salad that I had to find other ways to use it. This two-ingredient lemon salad dressing recipe is perfect over any salad greens, pasta salad, grain salads, chicken salads or seafood salads. The combination of fresh lemon juice and olive oil is also a great marinade for vegetables, chicken, fish, shrimp, pork, lamb and even beef.
The refreshing salad dressing recipe could not be easier to make. Simply whisk together fresh lemon juice and olive oil. Season with salt and black pepper and you're done. Fresh herbs like rosemary, oregano, basil, thyme, parsley or dill can be added to the salad dressing at the end. Get creative and make this dressing your own!
Store the olive oil-based salad dressing in an airtight container, salad dressing cruet or mason jar. You could even put the ingredients into a mason jar, secure the lid and shake.
