Roasted Carrots Recipe With Caramelized Onions: The Perfect Combination of Flavors

Carrots are usually a safe bet for dinner because most people – kids and adults – love them. You can bake, boil, steam, roast, grill, mash and even air fry carrots. This easy roasted carrots recipe with caramelized onions bakes in the oven. The natural sweetness of the carrots and onions complement each other perfectly.

Start by cutting a pound of carrots into coins. You can peel them if you like, or just give them a good scrub in the sink. Toss the carrots in a baking pan with a sliced onion, then drizzle with olive oil, melted butter, white wine and chicken broth. If you don't like cooking with wine, add more broth or water. Bake the carrots in the oven for about 20 minutes or until the onions caramelize and the carrots are crisp-tender.

Serve this easy carrot recipe with chicken, pork, fish, beef or lamb. If you want to add some freshness, sprinkle in the chopped fresh herbs. Looking for more carrot recipes? Try our shredded baked carrots, grandma's copper pennies, glazed carrots and air fryer carrots.
