This easy roasted carrots recipe with caramelized onions bakes in the oven. The natural sweetness of the carrots and onions complement each other perfectly.

Start by cutting a pound of carrots into coins. You can peel them if you like, or just give them a good scrub in the sink. Toss the carrots in a baking pan with a sliced onion, then drizzle with olive oil, melted butter, white wine and chicken broth. If you don't like cooking with wine, add more broth or water. Bake the carrots in the oven for about 20 minutes or until the onions caramelize and the carrots are crisp-tender.

  • 1 pound carrots, cut into coins
  • 1 large onion, sliced 
  • 2 tablespoons olive oil 
  • 1 tablespoon butter, melted
  • 1/4 cup white wine
  • 1/4 cup chicken broth

  1. Put the onion and carrots into a baking pan. Drizzle with the olive oil, butter, wine and broth. Season with salt and pepper. Toss to coat.
  2. Bake in a preheated 400-degree F oven until carrots are tender and onions caramelized, about 20 minutes.
