Ingredients
- 4 egg whites
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 2 cups unsweetened shredded coconut
Recipe Notes
- The amount of cookies depends on the size of the spoonfuls you use.
- You could add some lemon zest to the cookie recipe for a little lemon accent.
- To fancy them up, melt some chocolate and drizzle it with a fork over the cookies or dip the bottoms of the cookies into the chocolate.

Here's how to make it:
- Put the egg whites into a mixing bowl. Beat with an electric mixer until stiff, about 5 minutes. Add the vanilla.
- In another bowl, combine the coconut and sugar. Slowly add the mixture to the egg whites until well mixed. (Be gentle when mixing so you don't deflate the egg whites.)
- Using a spoon, drop about 1 heaping teaspoon of dough for each cookie onto parchment paper-lined baking sheets.
- Bake in a preheated 300-degree F oven for about 20 minutes, or until lightly browned (do no overbake). Remove to cool.
