This two-ingredient (we don't count the salt and pepper!) vinaigrette recipe is perfect for drizzling over salads like this Barefoot Contessa-inspired corn salad recipe. It would be equally delicious on a cucumber salad, pasta salad, spring lettuce salad, quinoa salad, bean salad, tomato salad or even tuna salad.
The two-ingredient vinaigrette recipe is made with extra virgin olive oil and apple cider vinegar. That's it. You really don't need anything else on that salad. Whisk the two ingredients together, season with kosher salt and black pepper, and you have a tasty salad dressing to complement those greens, or whatever you pour it over. - 6 tablespoons extra virgin olive oil
- 6 tablespoons apple cider vinegar
Here's how to make it:
- Whisk together all the ingredients in a small mixing bowl or shake in a salad dressing cruet. You could substitute other vinegars – white wine vinegar, sherry vinegar, red wine vinegar, champagne vinegar or balsamic vinegar – for the apple cider vinegar. You could also add other flavorings like dried herbs, fresh garlic or whatever you enjoy in your salad dressings.
- Season with salt and pepper. Store this olive oil vinaigrette in a salad dressing cruet or mason jar on the counter.
