Microwave Peanut Brittle Recipe: This 6-Ingredient Old-fashioned Peanut Brittle Recipe Is Foolproof by Melissa Vickers

Let’s hear it for the microwave! It’s been around for decades now and has revolutionized what we do in the kitchen. And it is the key to making old-fashioned peanut brittle candy in a flash – and I have yet to mess up this easy dessert recipe!
This easy peanut brittle recipe takes about 15 minutes to make. Be sure to share with friend and family!
Cuisine: American
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes (plus time to cool)
Ingredients
- 1 cup peanuts (or your favorite nut)
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla
- 1 teaspoon butter
- 1 teaspoon baking soda
Here’s how to make it:
- Mix peanuts, sugar, and corn syrup in a microwavable dish (a 4-cup Pyrex measuring cup is perfect, and the handle won’t get hot!). Cook on high for 7 to 8 minutes. Stir halfway through.
- Add vanilla and butter and continue cooking on high for 2 to 3 minutes. Mixture should be darkened.
- Add baking soda and stir quickly (it foams). Pour onto lightly greased cookie sheet, spreading thin. Let cool and break into pieces.
