This easy five-ingredient pumpkin pizza recipe has sweet caramelized onions and gouda. Delicious! Did you know that pumpkin has some impressive health benefits, too? So this fall-inspired pizza is a win-win!
To make this pumpkin pizza you will need olive oil, an onion, fresh garlic, a pizza crust (you can make a homemade pizza dough, but we used a premade dough), pumpkin puree and gouda cheese. After caramelizing the onions, the pizza is assembled and bakes up in about 15 minutes in the oven. So delicious!
Serve this homemade vegetarian pizza for lunch or dinner with your favorite side dishes. This pizza would be a fun Thanksgiving appetizer!

Ingredients
- 2 tablespoons olive oil
- 1 onion, sliced thin
- 4 cloves garlic, minced
- 1 premade pizza crust or refrigerated pizza dough
- 3/4 cup pumpkin puree
- 2 cups gouda, grated
Recipe Notes
- You could make your own homemade pizza dough instead of using premade pizza dough.
- Use canned pumpkin puree, not pumpkin pie filling. You could also use fresh pumpkin puree.
- Instead of gouda, try white cheddar, fontina, asiago or your favorite cheese blend.
- For some spice, sprinkle on some crushed red pepper flakes.
Here's how to make it:
- Heat the oil in a large pan. Add the onions and cook about 20 minutes or until soft and caramelized, stirring often. Add the garlic and cook 30 seconds. Season with salt and pepper.
- Put the pizza crust on a pizza pan or pizza stone. Spread the pumpkin puree evenly over the dough. Top with the onions, then sprinkle with the cheese.
- Bake in a preheated 475-degree F oven for about 15 minutes or until crust is golden and cheese has melted.
