Pumpkins pop up everywhere this time of year, but on your pizza? Why not? This savory pumpkin pizza recipe e will change the way you look at pizza – and pumpkins.

You don't need a lot of ingredients to make this pumpkin pizza, and you start with a premade pizza crust, so the prep is quick and easy. Here is your shopping list for this fall-inspired pumpkin pizza: a pizza crust, olive oil, onion, garlic, canned pumpkin or fresh roasted pumpkin (see Recipe Notes), fresh thyme, Parmesan cheese and either white cheddar or Havarti cheese.

This pizza is an explosion of fall flavors in your mouth. Serve this pizza hot out of the oven for dinner or lunch. Add a side salad to round out the meal.

  • 1 ready-to-bake pizza crust
  • olive oil
  • 1 onion, chopped
  • 3 - 4 cloves garlic, minced
  • 1 1/2 cups canned pumpkin puree or 1 1/2 cups cubed roasted pumpkin
  • 1 tablespoon fresh chopped thyme
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups grated white cheddar or Havarti cheese

  • To roast the pumpkin, lay the pumpkin cubes on a baking sheet. Drizzle with a little olive and season with salt and pepper. Bake in a preheated 400-degree F oven for about 20 minutes or until tender.
  • If using canned pumpkin, buy pumpkin puree not pumpkin pie filling.
  • You can certainly make your own homemade pizza crust for this recipe instead of using a premade pizza crust.

Here’s how to make it:

  1. Cook the onion in a little olive oil over medium-low heat until it is soft and starting to take on a golden color.
  2. Add the garlic, pumpkin, thyme and Parmesan cheese. Season with salt and pepper, to taste.
  3. Put your dough on a pizza pan, pizza stone or cookie sheet. Top it with the pumpkin mixture and sprinkle with the cheddar or Havarti cheese.
  4. Bake in a preheated 350-degree F oven for about 12 to 15 minutes, or until crust is browned and pizza is bubbly.
