These chocolate pancakes will be a hit at your next weekend breakfast or brunch. They’re extra fluffy with golden edges, and taste delicious with the added kick of coffee-flavored whipped cream. If you’re looking for a pancake recipe that has a little kick to it, well, you found it!

Cuisine: American
Prep Time: 10 Minutes
Cook Time 30 Minutes
Total Time: 40 minutes
Serves 4 to 6

Ingredients

Here's how to make it:

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt and cocoa. Set aside.
  2. In a another bowl, whisk together the milk eggs, vanilla, melted butter and sugar. Add the wet ingredients to the dry ingredients.
  3. Heat a griddle to 350 degrees F or a frying pan to medium-low heat. Lightly grease with oil or nonstick cooking spray. Pour about 1/4 to 1/2 cup of batter onto the griddle or pan and cook until you see little bubbles form. Flip and continue to cook on the second side until both sides are golden. Repeat with the rest of the batter. Keep pancakes warm until serving.
  4. Whip the cream until soft peaks form. Add powdered sugar to sweeten and instant espresso. Keep chilled.
  5. Serve the pancakes drizzled with chocolate sauce and with the espresso whipped cream. Garnish with the raspberries and nuts, if desired.

LOL! Before they closed Pastry Kitchens in big Hotels ( in the old days) I was a pastry chef, and I'd always suggest eating dessert first!
