Cochinita pibil – also called puerco pibil or cochinita con achiote – is a slow-cooked pork recipe from the Yucatán Peninsula. This easy Mexican recipe is loaded with flavor and just begs for a bowl of guacamole next to it.

- 2- to 3-pound pork butt
- 3 - 4 tablespoons achiote paste (try this homemade achiote paste substitute)
- 1/3 cup orange juice
- 1/3 cup lemon juice
- 1/3 cup apple cider vinegar or white vinegar
- 1 habanero pepper, seeded and finely chopped (wear gloves when handling this pepper) or 1 jalapeno
- 2 1/2 teaspoons cumin
- 2 1/2 teaspoons smoked paprika
- 1 teaspoon ground coriander
- pickled red onions
- corn tortillas
Here's how to make it:
- Season the pork butt with salt and pepper, then rub it with the achiote paste. Put it into a slow cooker.
- In a bowl, whisk together the orange juice, lemon juice, vinegar, pepper, cumin, paprika and coriander. Pour this mixture over the pork butt.
- Cook on low heat for about 8 hours or until pork is tender.
- When pork is cooked, shred it using two forks or meat claws. Serve with pickled red onions, tortillas and other desired toppings.
